Our cheeses

The estate keeps on average 500 animals for producing milk which is then made into high quality cheese. The milk from the sheep is used directly (i.e. without being pasteurized) into cheese. There are various kinds of cheese: fresh cheese; ‘abbuccciato’ cheese which is matured for about two months; ripened cheese which is seasoned for at least 6 months and ‘grotta’ cheese, with a strong taste of mould, also seasoned for 6 months.
